  • 3 medium zucchini, shredded
  • 1 large egg, lightly beaten
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup pepperoni slices (optional)
  • 1 teaspoon dried Italian seasoning

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9×9 inch baking dish.
  2. Place the shredded zucchini in a clean kitchen towel or several layers of paper towels. Squeeze out as much liquid as possible. This step is important for texture.
  3. In a medium bowl, combine the squeezed zucchini, beaten egg, flour, salt, and pepper. Mix until just combined.
  4. Press the zucchini mixture evenly into the bottom of the prepared baking dish to form the base layer.
  5. Spread the pizza sauce over the zucchini base.
  6. Sprinkle half of the mozzarella cheese over the sauce.
  7. Arrange the pepperoni slices, if using, over the cheese layer.
  8. Top with the remaining mozzarella cheese and sprinkle with Italian seasoning.
  9. Bake for 25 to 30 minutes, or until the cheese is melted and bubbly and the edges are lightly browned.
  10. Let the casserole rest for 5 minutes before cutting and serving.
