  • 1/2 cup sour cream or plain yogurt
  • For the Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, cream together the granulated sugar and softened butter until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a small bowl, combine the grated zucchini and sour cream (or yogurt).
  6. Add the dry ingredients to the wet ingredients alternately with the zucchini mixture, beginning and ending with the dry ingredients. Mix until just combined after each addition. Do not overmix.
  7. Pour the batter evenly into the prepared baking pan.
  8. Prepare the streusel topping: In a medium bowl, combine the flour, brown sugar, granulated sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  9. Sprinkle the streusel topping evenly over the cake batter.
  10. Bake for 35-45 minutes, or until a wooden skewer inserted into the center comes out clean.
  11. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
