Description

Crispy french fries tossed in a spicy, tangy seasoning blend.


Ingredients

  • 2 lbs potatoes, cut into fry shape
  • 4 cups vegetable oil for frying
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh lemon juice

Instructions

  1. Soak the cut potatoes in cold water for 30 minutes. Drain and pat them completely dry.
  2. Heat the vegetable oil in a deep fryer or heavy pot to 325°F (160°C).
  3. Fry the potatoes in batches until they are pale golden, about 5-7 minutes. Remove and drain on paper towels.
  4. Increase the oil temperature to 375°F (190°C).
  5. Fry the potatoes again until they are golden brown and crisp, about 2-4 minutes. Remove and drain well.
  6. In a small bowl, mix the paprika, garlic powder, onion powder, cayenne pepper, oregano, thyme, salt, and black pepper to create the seasoning mix.
  7. Place the hot fries in a large bowl. Drizzle with lemon juice and immediately sprinkle the seasoning mix over the fries. Toss gently to coat evenly.
  8. Serve immediately.

  • For extra crispness, double-fry the potatoes as instructed.
