- 1 head cauliflower, cut into small florets
- 1 (15-ounce) can chickpeas, rinsed and drained
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 4 large whole wheat tortillas
- 1/4 cup chopped fresh cilantro
- 1/4 cup plain Greek yogurt
- 2 tablespoons lime juice
- 1 teaspoon sriracha (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- On a baking sheet, toss cauliflower florets and chickpeas with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
- Roast for 20-25 minutes, or until cauliflower is tender and slightly browned.
- While the vegetables roast, prepare the dressing: In a small bowl, whisk together Greek yogurt, lime juice, and sriracha (if using). Season with salt and pepper.
- Warm the tortillas according to package directions.
- Assemble the wraps: Divide the roasted cauliflower and chickpea mixture among the tortillas. Drizzle with the chili-lime dressing and sprinkle with fresh cilantro.
- Fold or roll the tortillas to create wraps.
Notes
- For extra spice, add a pinch of cayenne pepper to the vegetable mixture.
- You can substitute sour cream or vegan yogurt for the Greek yogurt.
- Add other vegetables like chopped bell peppers or red onion to the roasting pan for more flavor and texture.
