Description

A quick and flavorful vegetarian wrap featuring spiced chickpeas and roasted cauliflower with a zesty chili-lime dressing.


Ingredients

  • 1 head cauliflower, cut into small florets
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 large whole wheat tortillas
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons lime juice
  • 1 teaspoon sriracha (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, toss cauliflower florets and chickpeas with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  3. Roast for 20-25 minutes, or until cauliflower is tender and slightly browned.
  4. While the vegetables roast, prepare the dressing: In a small bowl, whisk together Greek yogurt, lime juice, and sriracha (if using). Season with salt and pepper.
  5. Warm the tortillas according to package directions.
  6. Assemble the wraps: Divide the roasted cauliflower and chickpea mixture among the tortillas. Drizzle with the chili-lime dressing and sprinkle with fresh cilantro.
  7. Fold or roll the tortillas to create wraps.

Notes

  • For extra spice, add a pinch of cayenne pepper to the vegetable mixture.
  • You can substitute sour cream or vegan yogurt for the Greek yogurt.
