Ingredients

Scale
  • 12 ounces white chocolate, good quality, finely chopped
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon vanilla extract
  • 1/2 cup dried cranberries, finely chopped

  1. Place the chopped white chocolate in a heatproof bowl.
  2. In a small saucepan, heat the heavy cream and butter over medium heat until simmering. Do not boil.
  3. Pour the hot cream mixture over the white chocolate. Let stand for 5 minutes, then whisk until smooth and fully melted.
  4. Stir in the vanilla extract.
  5. Fold in the chopped dried cranberries and chopped pistachios.
  6. Cover the bowl and refrigerate the mixture for at least 2 hours, or until firm enough to roll.
