- 1/2 cup heavy cream
- 2 tablespoons unsalted butter
- 1/2 teaspoon vanilla extract
- 1/2 cup dried cranberries, finely chopped
- 1/2 cup shelled pistachios, finely chopped
- 1/4 cup powdered sugar, for dusting (optional)
Instructions
- Place the chopped white chocolate in a heatproof bowl.
- In a small saucepan, heat the heavy cream and butter over medium heat until simmering. Do not boil.
- Pour the hot cream mixture over the white chocolate. Let stand for 5 minutes, then whisk until smooth and fully melted.
- Stir in the vanilla extract.
- Fold in the chopped dried cranberries and chopped pistachios.
- Cover the bowl and refrigerate the mixture for at least 2 hours, or until firm enough to roll.
- Once firm, use a small scoop or your hands to roll the mixture into 1-inch balls.
- If desired, roll the truffles in powdered sugar.
- Store the truffles in an airtight container in the refrigerator for up to 1 week.
