  • 12 lasagna noodles
  • 2 cups cooked chicken, shredded
  • 15 ounces ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 8 ounces mozzarella cheese, shredded
  • 4 ounces provolone cheese, sliced

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package directions. Drain and set aside.
  3. In a medium bowl, combine ricotta cheese, Parmesan cheese, egg, parsley, salt, and pepper. Mix well.
  4. In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  5. Gradually whisk in milk until smooth. Cook, stirring constantly, until the sauce thickens, about 5-7 minutes.
  6. To assemble, spread a thin layer of white sauce on the bottom of a 9×13 inch baking dish.
  7. Arrange 3-4 lasagna noodles over the sauce.
  8. Spread half of the ricotta mixture over the noodles.
  9. Top with half of the shredded chicken.
  10. Pour about 1 cup of white sauce over the chicken.
  11. Sprinkle with half of the mozzarella and provolone cheeses.
  12. Repeat layers.
  13. Top with the remaining noodles, white sauce, and cheeses.
  14. Bake for 30-35 minutes, or until bubbly and golden brown.
  15. Let stand for 10 minutes before serving.

Notes

  • For a richer flavor, use whole milk.
  • Add a pinch of nutmeg to the white sauce for extra depth.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
