- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 pound lean ground turkey or chicken
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
- 6 cups low-sodium chicken or vegetable broth
- 1 (15 ounce) can diced tomatoes, undrained
- 1 cup chopped zucchini
- 1 cup chopped bell pepper
- 1/2 cup cooked lentils
- 1/4 cup chopped fresh parsley
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Add ground turkey or chicken and cook, breaking it up with a spoon, until browned.
- Stir in oregano, basil, thyme, salt, and pepper.
- Pour in broth and diced tomatoes. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Add zucchini and bell pepper. Cook for another 10 minutes, or until vegetables are tender.
- Stir in cooked lentils and parsley.
- Serve hot.
Notes
- For a vegetarian option, omit the turkey/chicken and add more lentils or chickpeas.
- Adjust seasonings to your preference.
- This soup can be made ahead and stored in the refrigerator for up to 3-4 days.
