A simple and quick recipe for creamy Tuscan chicken pasta suitable for a weeknight meal.

- 1 pound chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 12 ounces pasta (fettuccine or penne recommended)
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup fresh spinach
- 1/2 cup sun-dried tomatoes, drained and chopped
Instructions
- Season chicken pieces with salt, pepper, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
- Cook pasta according to package directions. Reserve about 1/2 cup of the pasta water before draining.
- In the same skillet, add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Reduce heat to medium-low. Stir in heavy cream and Parmesan cheese. Cook until the sauce thickens slightly, about 3 minutes.
- Stir in spinach and sun-dried tomatoes. Cook until spinach wilts.
- Return the cooked chicken to the skillet. Add the drained pasta. Toss to coat everything in the sauce.
- If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.
- Serve immediately.
Notes
- Use store-bought rotisserie chicken to save cooking time.
- For extra flavor, add a pinch of dried Italian seasoning to the sauce.
