- For the Crumble:
- 1/2 cup all-purpose flour
- 1/4 cup packed brown sugar
- 1/4 cup rolled oats
- 2 tablespoons vegan butter, cold and cubed
Instructions
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour a standard loaf pan.
- In a large bowl, whisk together the 1 cup flour, baking soda, cinnamon, nutmeg, and salt for the bread batter.
- In a separate medium bowl, mix the mashed sweet potato, granulated sugar, vegetable oil, plant milk, and vanilla extract until combined.
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- Prepare the crumble: In a small bowl, combine the 1/2 cup flour, brown sugar, and oats. Cut in the cold vegan butter using your fingers or a pastry blender until the mixture resembles coarse crumbs.
- Pour the batter into the prepared loaf pan. Sprinkle the crumble topping evenly over the batter.
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
