  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 cup unsweetened plant-based milk
  • 1 teaspoon vanilla extract
  • 1 cup mashed strawberries
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. In a large bowl, whisk together the flour, rolled oats, baking powder, baking soda, and salt.
  3. In a separate bowl, combine the granulated sugar, vegetable oil, plant-based milk, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the mashed strawberries and lemon juice.
  6. Pour the batter into the prepared cake pan and spread evenly.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
