  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 cup unsweetened applesauce
  • 1/4 cup neutral oil (like canola or vegetable)
  • 1/4 cup plant milk (like soy or almond)
  • 1 tablespoon orange zest
  • 2 tablespoons fresh orange juice
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen cranberries

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a standard loaf pan (about 9×5 inches).
  2. In a large bowl, whisk together the flour, baking soda, and salt.
  3. In a separate medium bowl, mix the granulated sugar, brown sugar, applesauce, oil, plant milk, orange zest, orange juice, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix.
  5. Fold in the cranberries.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

  • If you use frozen cranberries, do not thaw them before adding them to the batter.
  • For a sweeter top, you can sprinkle 1 tablespoon of coarse sugar over the batter before baking.
