Description
A simple recipe for a traditional Jamaican Irish Moss beverage, made vegan.
Ingredients
Scale
- 1 cup dried Irish moss (sea moss)
- 8 cups water (for soaking)
- 6 cups water (for boiling)
- 1/2 cup raw cane sugar or sweetener of choice
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- Pinch of nutmeg
Instructions
- Rinse the dried Irish moss thoroughly under cold water.
- Place the rinsed Irish moss in a large bowl and cover with 8 cups of water. Soak for at least 4 hours or overnight until soft and expanded.
- Drain the soaked Irish moss and rinse again. Discard the soaking water.
- Place the softened Irish moss and 6 cups of fresh water into a blender. Blend until completely smooth. This may take several minutes.
- Pour the blended mixture into a large pot.
- Add the sugar, vanilla extract, cinnamon, and nutmeg to the pot.
- Heat the mixture over medium heat, stirring constantly until it simmers and thickens slightly. Do not allow it to boil rapidly.
- Remove from heat and let it cool slightly. The mixture will thicken significantly as it cools.
- Strain the mixture through a fine-mesh sieve or cheesecloth into a clean container to remove any remaining fibers.
- Chill the drink thoroughly in the refrigerator for at least 4 hours before serving.
- Serve cold. Stir well before pouring as separation may occur.
Notes
- Adjust the amount of sweetener to your taste preference.
- For a richer flavor, you can add 1/4 cup of evaporated coconut milk before chilling (ensure it is vegan).
- If the drink becomes too thick after chilling, add a small amount of cold water until you reach your desired consistency.
