Ingredients

  • 2 cups unsweetened plant milk (soy, almond, or oat)
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons maple syrup (or to taste)
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons full-fat coconut cream (from the top of a chilled can)

Instructions

  1. Pour the plant milk into a small saucepan.
  2. Add the cocoa powder, maple syrup, vanilla extract, and salt to the saucepan.
  3. Heat the mixture over medium heat, whisking constantly until it is hot and the cocoa powder is fully dissolved. Do not let it boil.
  4. Remove the saucepan from the heat.
  5. Stir in the coconut cream until it is completely melted and incorporated, making the cocoa creamy.
  6. Pour into mugs and serve immediately.

Notes

  • For a thicker drink, reduce the amount of plant milk slightly.
  • If you prefer a less sweet drink, start with 1 tablespoon of maple syrup and adjust.
