Description
A soft, rich vegan bread flavored with everything bagel seasoning.
Ingredients

- 1 cup warm plant milk (about 105-115F)
- 2 1/4 teaspoons active dry yeast
- 1/4 cup granulated sugar
- 1/2 cup vegan butter, softened
- 1/2 cup unsweetened applesauce
- 1 teaspoon salt
- 4 cups all-purpose flour, plus more for dusting
- 1/4 cup everything bagel seasoning
- 2 tablespoons water (for topping)
Instructions
- Combine warm plant milk and yeast in a large bowl. Let stand for 5 minutes until foamy.
- Stir in sugar, softened vegan butter, applesauce, and salt into the yeast mixture.
- Gradually add flour, mixing until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface. Knead for 8-10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1 to 1.5 hours, or until doubled in size.
- Punch down the dough gently. Shape it into a loaf and place it in a greased 9×5 inch loaf pan.
- Cover the pan loosely and let the dough rise again for 30-45 minutes, or until it crests slightly over the pan edge.
- Preheat your oven to 375F (190C).
- Brush the top of the loaf lightly with water. Sprinkle generously with everything bagel seasoning.
- Bake for 35-40 minutes, or until golden brown and cooked through. If the top browns too quickly, loosely tent with foil.
- Remove the bread from the pan immediately after baking and cool completely on a wire rack before slicing.
Notes
- For a richer flavor, use a high-fat plant milk like soy or oat milk.
- If your kitchen is cold, place the rising dough in a turned-off oven with the light on.
