- 1 cup vegan butter, softened (for frosting)
- 3 cups powdered sugar (for frosting)
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, mix the apple sauce, oil, and vanilla extract.
- Combine the plant milk and apple cider vinegar; let stand for 5 minutes to curdle.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in the chopped apples.
- Divide the batter evenly between the prepared pans.
- Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pans for 10 minutes before inverting onto a wire rack to cool completely.
- To make the frosting, beat the softened vegan butter until creamy. Gradually add the powdered sugar and vanilla extract, beating until light and fluffy. Add a tablespoon of plant milk if the frosting is too stiff.
- Once cakes are cool, place one layer on a serving plate. Spread half of the vegan caramel sauce over the top.
- Place the second cake layer on top. Frost the top and sides of the entire cake with the vanilla frosting.
- Drizzle remaining vegan caramel sauce over the top before serving.

- Use firm, tart apples like Granny Smith for the best texture in the cake.
- Ensure your vegan butter is truly at room temperature for smooth frosting.
