A simple and moist vegan sheet cake made with oats and bananas.
Ingredients

- 1 ½ cups all-purpose flour
- 1 cup rolled oats
- 1 teaspoon baking soda
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ½ cup mashed ripe bananas (about 2 medium)
- ½ cup unsweetened applesauce
- ½ cup granulated sugar
- ⅓ cup vegetable oil
- 1 teaspoon vanilla extract
- ½ cup unsweetened plant-based milk
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together the flour, rolled oats, baking soda, cinnamon, and salt.
- In a separate medium bowl, combine the mashed bananas, applesauce, sugar, vegetable oil, and vanilla extract. Mix well.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Gradually stir in the plant-based milk until the batter is smooth.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- Ensure your bananas are very ripe for the best flavor and sweetness.
- You can add ½ cup of chopped walnuts or pecans to the batter for extra texture.
- This cake is delicious on its own or with a simple glaze.
