A simple recipe for baked apples with a vegan cinnamon caramel topping.


Ingredients

  • 4 medium apples (such as Honeycrisp or Gala)
  • 1/2 cup vegan butter
  • 1/2 cup packed brown sugar
  • 1/4 cup plant-based milk (soy or almond)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a baking dish.
  2. Wash the apples. Core the apples, leaving the bottom intact so the caramel mixture stays inside.
  3. In a small saucepan, combine the vegan butter, brown sugar, plant-based milk, vanilla extract, cinnamon, and salt.
  4. Heat the mixture over medium heat, stirring constantly until the butter melts and the sugar dissolves. Bring the mixture to a gentle simmer. Cook for 3 minutes, stirring occasionally, until slightly thickened. This is your caramel sauce.
  5. Place the cored apples in the prepared baking dish.
  6. Spoon the caramel sauce evenly into the center cavity of each apple. Pour any remaining sauce over the tops of the apples.
  7. Bake for 30 to 40 minutes, or until the apples are tender when pierced with a fork.
  8. Remove from the oven and let cool slightly before serving.
