- 1/2 cup vegan butter, softened
- 1 cup granulated sugar
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1/2 cup plant-based milk
- 2 medium apples, peeled and diced
- 1 teaspoon ground cinnamon
- 1/4 cup brown sugar (for topping)
- 1/4 cup all-purpose flour (for topping)
- 2 tablespoons cold vegan butter (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
- In a medium bowl, whisk together 1 1/2 cups flour, baking soda, and salt for the cake batter.
- In a large bowl, cream the softened vegan butter and granulated sugar until light and fluffy.
- Beat in the applesauce and vanilla extract.
- Gradually add the flour mixture alternately with the plant-based milk, mixing until just combined. Do not overmix.
- In a separate small bowl, toss the diced apples with cinnamon.
- For the crumble topping, combine 1/4 cup flour, brown sugar, and 2 tablespoons cold vegan butter using your fingers until coarse crumbs form.
- Spread half of the cake batter into the prepared pan. Top evenly with the cinnamon apples. Spread the remaining batter over the apples.
- Sprinkle the crumble topping evenly over the cake batter.
- Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan before slicing and serving.
Notes
- You can use any firm apple variety, such as Granny Smith or Honeycrisp.
- For a richer flavor, use brown sugar in the main cake batter instead of granulated sugar.
