- 4 medium apples, peeled, cored, and sliced
- 1 cup fresh or frozen cranberries
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch

- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1/2 cup all-purpose flour (for crumble)

- 1/2 cup packed brown sugar (for crumble)

- 1/2 cup cold vegan butter, cut into small pieces (for crumble)
Instructions
- Prepare your vegan pie crust and line a 9-inch pie dish. Chill while preparing the filling.
- In a large bowl, combine the sliced apples, cranberries, granulated sugar, cornstarch, cinnamon, nutmeg, and lemon juice. Mix gently until the fruit is coated.
- Pour the fruit mixture into the chilled pie crust.
- Prepare the crumble topping: In a separate bowl, whisk together the flour, oats, brown sugar, and salt.
- Cut in the cold vegan butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Sprinkle the crumble topping evenly over the fruit filling.
- Bake at 375 degrees Fahrenheit for 50 to 60 minutes, or until the topping is golden brown and the filling is bubbly.
- Cool on a wire rack for at least 2 hours before slicing and serving.
Notes
- You can use frozen cranberries without thawing them first.
- If the crumble browns too quickly, loosely cover the pie with foil for the last 15 minutes of baking.
