- 2 slices thick-cut bread
- 4 ounces cooked shrimp, chopped
- 2 tablespoons unsalted butter, softened
- 1 clove garlic, minced
- 1/4 cup shredded Monterey Jack cheese
- 1/4 cup shredded cheddar cheese
- 1 tablespoon mayonnaise
- 1 teaspoon chopped fresh parsley
- Salt and black pepper to taste
Instructions
- In a small bowl, mix together the softened butter and minced garlic. Set aside.
- In another bowl, combine the chopped shrimp, Monterey Jack cheese, cheddar cheese, mayonnaise, and parsley. Season with salt and pepper.
- Spread the garlic butter on one side of each slice of bread.
- Place one slice of bread, garlic butter side down, in a non-stick skillet over medium heat.
- Spoon the shrimp and cheese mixture onto the bread in the skillet.
- Top with the second slice of bread, garlic butter side up.
- Cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted and bubbly.
- Slice in half and serve immediately.
