Ingredients

  • 4 ounces cooked shrimp, chopped
  • 2 tablespoons unsalted butter, softened

  • 1/4 cup shredded Monterey Jack cheese
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon mayonnaise
  • 1 teaspoon chopped fresh parsley

Instructions

  1. In a small bowl, mix together the softened butter and minced garlic. Set aside.
  2. In another bowl, combine the chopped shrimp, Monterey Jack cheese, cheddar cheese, mayonnaise, and parsley. Season with salt and pepper.
  3. Spread the garlic butter on one side of each slice of bread.
  4. Place one slice of bread, garlic butter side down, in a non-stick skillet over medium heat.
  5. Spoon the shrimp and cheese mixture onto the bread in the skillet.
  6. Top with the second slice of bread, garlic butter side up.
