  • 8 slices thick-cut bread (like sourdough or Italian)
  • 1/2 cup unsalted butter, softened
  • 2 cloves garlic, mashed into a paste
  • 1/4 cup chopped fresh parsley
  • 8 ounces Gruyere cheese, grated
  • 8 ounces sharp cheddar cheese, grated

Instructions

  1. In a medium bowl, toss the shrimp with olive oil, minced garlic, red pepper flakes, salt, and pepper. Let marinate for 15 minutes.
  2. In a small bowl, combine the softened butter, mashed garlic, and parsley. This is your garlic butter.
  3. Preheat a large skillet or griddle over medium heat.
  4. Butter one side of each slice of bread generously with the garlic butter.
  5. Place 4 slices of bread, butter-side down, on the skillet.
  6. Layer half of the Gruyere and cheddar cheese on top of the bread.
  7. Add the marinated shrimp in a single layer over the cheese.
  8. Top with the remaining cheese.
  9. Place the remaining 4 slices of bread, butter-side up, on top of the cheese.
  10. Cook for 4-5 minutes per side, or until the bread is golden brown and the cheese is melted and bubbly.
  11. Cut the grilled cheese in half and serve immediately.
