- 1 pound large shrimp, peeled and deveined
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- Salt and freshly ground black pepper to taste
- 8 slices thick-cut bread (like sourdough or Italian)
- 1/2 cup unsalted butter, softened
- 2 cloves garlic, mashed into a paste
- 1/4 cup chopped fresh parsley
- 8 ounces Gruyere cheese, grated
- 8 ounces sharp cheddar cheese, grated
Instructions
- In a medium bowl, toss the shrimp with olive oil, minced garlic, red pepper flakes, salt, and pepper. Let marinate for 15 minutes.
- In a small bowl, combine the softened butter, mashed garlic, and parsley. This is your garlic butter.
- Preheat a large skillet or griddle over medium heat.
- Butter one side of each slice of bread generously with the garlic butter.
- Place 4 slices of bread, butter-side down, on the skillet.
- Layer half of the Gruyere and cheddar cheese on top of the bread.
- Add the marinated shrimp in a single layer over the cheese.
- Top with the remaining cheese.
- Place the remaining 4 slices of bread, butter-side up, on top of the cheese.
- Cook for 4-5 minutes per side, or until the bread is golden brown and the cheese is melted and bubbly.
- Cut the grilled cheese in half and serve immediately.
Notes
- Adjust the amount of red pepper flakes to control the spice level.
- You can use other types of cheese if you prefer.
- Ensure the skillet is not too hot to prevent the bread from burning before the cheese melts.
