Description

A traditional Mexican dessert from Guadalajara, Jalisco, similar to flan or creme brulee.


Ingredients

  • 1 liter milk
  • 1 cinnamon stick
  • 1 cup sugar
  • 1 tablespoon vanilla extract
  • 5 egg yolks

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat milk with cinnamon stick in a saucepan until it simmers. Remove from heat and let it steep for 10 minutes. Remove cinnamon stick.
  3. Whisk together sugar, vanilla extract, and egg yolks in a bowl until well combined.
  4. Slowly pour the warm milk into the egg mixture, whisking constantly.
  5. Strain the mixture into individual ramekins or a large baking dish.
  6. Place the ramekins or dish in a larger baking pan and fill the larger pan with hot water halfway up the sides of the ramekins/dish.
  7. Bake for 30-40 minutes, or until the centers are set but still slightly wobbly.
  8. Remove from the oven and let cool completely before refrigerating for at least 2 hours.
  9. Serve chilled.

Notes

  • You can sprinkle a little cinnamon on top before serving.
  • Jericallas are often served with a slightly caramelized top, which you can achieve by placing them under a broiler for a minute or two before serving.
