- 1 small yellow onion, chopped
- 3 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes
- 1 (15 ounce) can tomato paste
- 1 cup vegetable broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 (15 ounce) cans butter beans, rinsed and drained
- 2 cups fresh spinach
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Stir in garlic, oregano, and red pepper flakes. Cook for 1 minute until fragrant.
- Add tomato paste and cook for 2 minutes, stirring constantly.
- Pour in vegetable broth and bring to a simmer.
- Reduce heat to low and stir in heavy cream and Parmesan cheese until the sauce thickens slightly.
- Add the drained butter beans to the skillet. Cook for 5 minutes, allowing the beans to heat through and absorb the sauce.
- Stir in the fresh spinach until it wilts completely.
- Season with salt and pepper to your liking.
- Serve hot.
Notes
- You can substitute cannellini beans for butter beans if needed.
- For a richer flavor, use chicken broth instead of vegetable broth.
- Garnish with fresh basil before serving.
