  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 (15 ounce) cans butter beans, rinsed and drained
  • 2 cups fresh spinach
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Stir in garlic, oregano, and red pepper flakes. Cook for 1 minute until fragrant.
  4. Add tomato paste and cook for 2 minutes, stirring constantly.
