- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons honey or maple syrup
- 1 tablespoon sesame oil
- 1 tablespoon fresh ginger, grated
- 1 clove garlic, minced
- 1/4 cup hot water (or more, for thinning)
- 1 cup shredded carrots
- 1 cup shredded red cabbage
- 1/2 cup chopped cilantro
- 8 large flour tortillas
Instructions
- In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, ginger, and garlic until smooth.
- Add hot water one tablespoon at a time until the sauce reaches your desired drizzling consistency.
- In a large bowl, combine the shredded chicken, carrots, red cabbage, and cilantro.
- Pour the peanut sauce over the chicken and vegetable mixture. Toss gently until everything is evenly coated.
- Warm the tortillas according to package directions.
- Divide the chicken mixture evenly among the tortillas. Roll up tightly to form wraps. Serve immediately.
Notes
- You can substitute pre-cooked rotisserie chicken for faster preparation.
- For extra crunch, add chopped peanuts as a topping before serving.
- If you prefer a spicier sauce, add 1/2 teaspoon of sriracha to the sauce mixture.
