A simple recipe for sweet potatoes filled with seasoned ground meat and taco toppings.

- 2 large sweet potatoes
- 1 pound ground beef or turkey
- 1 tablespoon taco seasoning
- 1/2 cup water
- 1/2 cup shredded cheddar cheese
- 1/4 cup salsa
- 2 tablespoons sour cream
- 1 green onion, sliced
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Prick the sweet potatoes several times with a fork.
- Bake the sweet potatoes for 45 to 60 minutes, or until tender when squeezed.
- While the potatoes bake, cook the ground meat in a skillet over medium heat until browned. Drain any excess fat.
- Stir in the taco seasoning and water. Simmer for 5 minutes until the liquid reduces slightly.
- Once the potatoes are cooked, slice them lengthwise down the center without cutting all the way through. Gently fluff the inside flesh with a fork.
- Spoon the meat mixture evenly into the potato halves.
- Top each potato with shredded cheese, salsa, sour cream, and sliced green onion.
- Serve immediately.
Notes
- You can substitute black beans for half of the ground meat for a vegetarian option.
- Bake the potatoes ahead of time and reheat them before filling.
