Description

  • 4 large baking potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup salsa
  • 2 tablespoons chopped green onion

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Scrub the potatoes clean and prick them several times with a fork.
  2. Bake the potatoes directly on the oven rack for 50 to 60 minutes, or until tender when squeezed.
  3. While the potatoes bake, brown the ground beef in a skillet over medium heat. Drain off any excess fat.
  4. Stir in the taco seasoning mix and water according to the package directions. Simmer for 5 minutes until the sauce thickens slightly.
  5. Remove the potatoes from the oven. Slice each potato lengthwise, opening it up without cutting all the way through. Fluff the inside with a fork.
  6. Spoon the taco meat mixture evenly into the opened potatoes.
  7. Top each stuffed potato with shredded cheddar cheese, a dollop of sour cream, salsa, and chopped green onion.
  8. Serve immediately.

Notes

  • You can microwave the potatoes for a faster prep time, about 6 to 8 minutes, turning halfway through.
