Ingredients

  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 200°F (95°C). Line a baking sheet with parchment paper.
  2. In a clean, dry bowl, beat egg whites with an electric mixer until foamy.
  3. Add cream of tartar and salt. Continue beating until soft peaks form.
  4. Gradually add granulated sugar, one tablespoon at a time, beating until stiff, glossy peaks form.
  5. Beat in vanilla extract.
  6. Spoon or pipe meringue onto the prepared baking sheet.
  7. Bake for 1 hour and 30 minutes, or until meringues are dry and crisp.
  8. Turn off the oven and leave meringues inside with the door ajar for another 30 minutes to cool completely.
  9. Store in an airtight container at room temperature.
