- 1 tablespoon olive oil
- Salt and black pepper to taste
- 1/2 cup honey
- 1/4 cup soy sauce
- 2 tablespoons minced garlic
- 1 teaspoon grated fresh ginger
- 1 pound potatoes, peeled and quartered
- 1/2 cup milk
- 4 tablespoons butter
- Salt and pepper to taste
Instructions
- Season pork chops with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear pork chops for 2-3 minutes per side until golden brown.
- In a small bowl, whisk together honey, soy sauce, minced garlic, and grated ginger.
- Pour the honey garlic sauce over the pork chops in the skillet. Reduce heat to medium-low, cover, and simmer for 10-15 minutes, or until pork chops are cooked through and the sauce has thickened.
- While the pork chops are cooking, place the potatoes in a pot and cover with cold water. Bring to a boil and cook for 15-20 minutes, or until tender.
- Drain the potatoes and return them to the pot. Add milk and butter. Mash until smooth and creamy. Season with salt and pepper.
- Serve the honey garlic pork chops with creamy mashed potatoes.
