Soft, chewy snickerdoodle cookies filled with sweet caramel and diced apples, rolled in cinnamon sugar.

- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 3/4 cups all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda

- 1 cup finely diced apple (such as Honeycrisp or Granny Smith)
- 1/2 cup soft caramel candies, chopped
- 1/4 cup granulated sugar for rolling
- 2 tablespoons ground cinnamon for rolling
Instructions
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and 1 1/2 cups sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in the diced apple and chopped caramel candies.
- In a small, shallow bowl, mix the 1/4 cup sugar and 2 tablespoons cinnamon for the coating.
- Roll the dough into 1-inch balls and then roll each ball thoroughly in the cinnamon-sugar mixture.
- Place the coated balls 2 inches apart on the prepared baking sheets.
- Bake for 9 to 11 minutes, or until the edges are set. The centers may look slightly soft.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Use firm apples that hold their shape well during baking.
- If your caramel candies are sticky, chill them slightly before chopping.
- You can slightly flatten the dough balls with the bottom of a glass before rolling in cinnamon sugar for a flatter cookie.
