  • 1 cup mixed nuts and seeds (almonds, pumpkin seeds, sunflower seeds)
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup honey
  • 1/4 cup fresh orange juice
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup dried fruit (raisins or cranberries, added after baking)

Instructions

  1. Preheat your oven to 300 degrees Fahrenheit. Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, nuts, seeds, and shredded coconut.
  3. In a separate small bowl, whisk together the honey, orange juice, melted coconut oil, vanilla extract, cinnamon, and salt.
  4. Pour the wet mixture over the dry ingredients. Stir well until everything is evenly coated.
  5. Spread the granola mixture in a single, even layer onto the prepared baking sheet.
  6. Bake for 25 to 30 minutes, stirring halfway through, until the granola is golden brown and fragrant.
  7. Remove from the oven and let it cool completely on the baking sheet. The granola will crisp up as it cools.
  8. Once cool, stir in the dried fruit. Store in an airtight container.

Notes

  • For a crunchier granola, press the mixture down firmly before baking.
  • Adjust the amount of honey if you prefer a sweeter or less sweet granola.
  • You can substitute maple syrup for honey to make this recipe vegan.
