Street Corn Smash Burger Tacos

Description

A recipe for tacos combining smashed burger patties with Mexican street corn flavors.


Ingredients

  • 1 pound ground beef (80/20 recommended)
  • 4 hamburger buns
  • 1 cup corn kernels (fresh or frozen)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1 tablespoon oil

Instructions

  1. Mix mayonnaise, sour cream, half of the cotija cheese, half of the cilantro, lime juice, chili powder, and cumin in a bowl. This is the street corn sauce. Set aside.
  2. Heat oil in a large skillet over medium-high heat.
  3. Divide ground beef into 8 equal portions.
  4. Place two portions of beef in the hot skillet, spaced apart. Season with salt and pepper.
  5. Use a sturdy spatula or burger press to smash the beef portions very thin. Cook for 2 minutes.
  6. Flip the smashed patties. Cook for 1 more minute. Remove from skillet and set aside. Repeat with remaining beef portions.
  7. In the same skillet, add the corn kernels. Cook until slightly charred, about 3-4 minutes. Stir the cooked corn into the street corn sauce.
  8. Warm the tortillas according to package directions (dry skillet or microwave).
  9. Assemble the tacos: Place a smashed patty on each tortilla. Top with the street corn mixture. Garnish with remaining cotija cheese and cilantro.

Notes

  • For extra flavor, lightly toast the inside of the hamburger buns in the skillet before using them for the smash burgers.
  • You can substitute Mexican crema for the sour cream if desired.
