A simple recipe for light cake layers flavored with fresh strawberries and cream.

- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/2 cup strawberry puree
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Grease and flour two 8-inch round cake pans.
- Whisk together the flour, baking powder, and salt in a medium bowl. Set aside.
- In a large bowl, cream the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a small bowl, mix the milk and strawberry puree.
- Alternate adding the dry ingredients and the wet mixture to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Divide the batter evenly between the prepared pans.
- Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
Notes
- For best flavor, use fresh, ripe strawberries for the puree.
- You can substitute buttermilk for the milk for a slightly tangier flavor.
