A quick and healthy stir-fried tofu and bok choy recipe, perfect for a weeknight meal.
Ingredients

- 14 ounces firm tofu, pressed and cubed
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 pound bok choy, chopped
- 1/4 cup vegetable broth
- 1 teaspoon sesame oil
Instructions
- Toss tofu with soy sauce and cornstarch.
- Heat vegetable oil in a wok or large skillet over medium-high heat.
- Add tofu and stir-fry until golden brown on all sides. Remove tofu from skillet.
- Add garlic and ginger to the skillet and stir-fry for 30 seconds until fragrant.
- Add bok choy and vegetable broth. Stir-fry until bok choy is tender-crisp.
- Return tofu to the skillet.
- Drizzle with sesame oil and toss to combine.
Notes
- For crispier tofu, freeze and then thaw the tofu before pressing.
- Add your favorite vegetables like carrots, bell peppers, or mushrooms.
- Serve with rice or noodles.
