A quick and healthy stir-fry featuring tender shrimp, crisp asparagus, and earthy mushrooms in a savory sauce.

- 1 pound large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 8 ounces mushrooms, sliced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, cornstarch, and water. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add shrimp and cook until pink and opaque, about 2-3 minutes. Remove shrimp from skillet and set aside.
- Add asparagus and mushrooms to the skillet. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
- Add garlic and ginger to the skillet and cook for 30 seconds until fragrant.
- Return shrimp to the skillet.
- Pour the sauce mixture over the shrimp and vegetables. Stir well to coat.
- Cook for 1-2 minutes until the sauce has thickened.
- Season with salt and pepper to taste.
- Serve immediately.
Notes
- For extra flavor, add a pinch of red pepper flakes with the garlic and ginger.
- You can substitute broccoli or snap peas for asparagus.
- Serve over rice or noodles.
