- 1 prepared pie crust
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 4 large eggs
- 1/2 cup milk
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Press pie crust into a 9-inch pie plate.
- Spread spinach evenly over the bottom of the crust.
- Dollop ricotta cheese over the spinach.
- Sprinkle mozzarella cheese over the ricotta.
- In a medium bowl, whisk together eggs, milk, salt, and pepper.
- Pour egg mixture over the cheese and spinach.
- Bake for 35-40 minutes, or until the center is set and the top is golden brown.
- Let stand for 5 minutes before serving.
Notes
- You can use frozen spinach, just make sure to thaw and drain it well.
- Add other vegetables like mushrooms or onions for extra flavor.
- Substitute different cheeses based on your preference.
