Instructions

  1. Preheat oven to 375°F (190°C).
  2. Press pie crust into a 9-inch pie plate.
  3. Spread spinach evenly over the bottom of the crust.
  4. Dollop ricotta cheese over the spinach.
  5. Sprinkle mozzarella cheese over the ricotta.
  6. In a medium bowl, whisk together eggs, milk, salt, and pepper.
  7. Pour egg mixture over the cheese and spinach.
  8. Bake for 35-40 minutes, or until the center is set and the top is golden brown.
  9. Let stand for 5 minutes before serving.
