  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, combine chopped spinach, mozzarella cheese, Parmesan cheese, breadcrumbs, egg, minced garlic, salt, and pepper.
  2. Mix well until all ingredients are incorporated.
  3. Form the mixture into small patties, about 2 inches in diameter.
  4. Heat olive oil in a non-stick skillet over medium heat.
  5. Place the patties in the hot skillet and cook for 3-4 minutes per side, or until golden brown and cooked through.
