Ingredients

- 2 cups fresh spinach, chopped
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1 large egg
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- In a large bowl, combine chopped spinach, mozzarella cheese, Parmesan cheese, breadcrumbs, egg, minced garlic, salt, and pepper.
- Mix well until all ingredients are incorporated.
- Form the mixture into small patties, about 2 inches in diameter.
- Heat olive oil in a non-stick skillet over medium heat.
- Place the patties in the hot skillet and cook for 3-4 minutes per side, or until golden brown and cooked through.
- Remove patties from the skillet and place on a plate lined with paper towels to drain excess oil.
- Serve warm.
Notes
- You can add other herbs like dill or parsley for extra flavor.
- These patties can be frozen for up to 1 month.
- Serve with a side of yogurt dip or marinara sauce.
