- 1 pound pasta (penne or rigatoni)
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can pumpkin puree
- 1/2 cup heavy cream
- 1/2 cup vegetable broth
- 1/2 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1/4 teaspoon nutmeg
- 1 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Grease a 9×13 inch baking dish.
- Cook the pasta according to package directions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in the pumpkin puree, heavy cream, vegetable broth, Parmesan cheese, salt, pepper, red pepper flakes, and nutmeg. Cook, stirring constantly, until the sauce is smooth and heated through, about 5 minutes.
- Add the cooked pasta to the sauce and mix well to coat everything evenly.
- Transfer the pasta mixture to the prepared baking dish.
- Sprinkle the mozzarella cheese evenly over the top.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
Notes
- For a richer flavor, use chicken broth instead of vegetable broth.
- You can add cooked, crumbled sausage or bacon for extra protein.
