This spicy Mexican meatloaf offers a flavorful twist on a classic, combining ground beef with zesty spices and a touch of heat.

- 2 lbs ground beef
- 1 large onion, chopped
- 1 bell pepper, chopped
- 2 jalapeños, seeded and minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (8 oz) can tomato sauce
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper (optional, for extra heat)
- 1 cup breadcrumbs
- 1 large egg, beaten
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine ground beef, chopped onion, bell pepper, minced jalapeños, half of the diced tomatoes (undrained), half of the tomato sauce, cilantro, garlic, chili powder, cumin, smoked paprika, cayenne pepper (if using), breadcrumbs, egg, salt, and black pepper. Mix until just combined. Do not overmix.
- Shape the mixture into a loaf and place it in a baking dish.
- In a small bowl, mix the remaining diced tomatoes and tomato sauce. Pour this mixture over the meatloaf.
- Bake for 60-75 minutes, or until the internal temperature reaches 160°F (71°C) and the meatloaf is cooked through.
- Let stand for 10 minutes before slicing and serving.
Notes
- You can adjust the amount of jalapeño and cayenne pepper to control the spice level.
- Serve with rice, beans, or a side salad for a complete meal.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
