Description

A creamy cheesecake flavored with chai spices and set on a crunchy gingersnap cookie crust.


Ingredients

  • 1 1/2 cups gingersnap cookie crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Combine gingersnap crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan.
  3. Bake the crust for 10 minutes. Remove from the oven and let it cool slightly.
  4. Reduce the oven temperature to 325 degrees F (160 degrees C).
  5. Beat the softened cream cheese and 1 cup sugar in a large bowl until smooth.
  6. Mix in the sour cream, eggs, and vanilla extract until just combined. Do not overmix.
  7. Stir in the cinnamon, ginger, cardamom, and cloves.
  8. Pour the filling over the cooled crust.
  9. Bake for 45 to 55 minutes, or until the edges are set and the center has a slight jiggle.
  10. Turn off the oven, prop the door open slightly, and let the cheesecake cool inside the oven for 1 hour.
  11. Remove the cheesecake from the oven and cool completely on a wire rack.
  12. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For easier slicing, run a thin knife dipped in hot water around the edge of the cheesecake before releasing the springform side.
  • You can substitute 1 tablespoon of prepared chai concentrate for the individual spices if you prefer.
