Description

Ingredients

  • 1 cup long-grain white rice, uncooked
  • 1/2 cup chopped yellow onion
  • 1 clove garlic, minced
  • 1 (8 ounce) can tomato sauce
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a medium saucepan over medium heat.
  2. Add uncooked rice and chopped onion. Cook, stirring, until rice is lightly toasted and onion is softened, about 5 minutes.
  3. Add minced garlic and cook for 1 minute more until fragrant.
  4. Stir in tomato sauce, chicken broth, salt, and pepper.
  5. Bring the mixture to a boil.
  6. Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is tender and liquid is absorbed.
  7. Fluff with a fork before serving.

Notes

  • For a spicier version, add a pinch of cayenne pepper.
