A simple and healthy way to prepare spaghetti squash, roasted with garlic and fresh herbs for a flavorful side dish.
Ingredients

- 1 medium spaghetti squash
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Place the squash halves cut-side down on a baking sheet.
- Roast for 40-50 minutes, or until tender when pierced with a fork.
- Remove from oven and let cool slightly.
- Use a fork to scrape out the strands of squash.
- In a bowl, toss the squash strands with olive oil, minced garlic, oregano, thyme, salt, and pepper.
- Serve immediately, garnished with fresh parsley.
Notes
- You can add a pinch of red pepper flakes for a little heat.
- Other herbs like rosemary or basil can be used.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
