Description

A simple and healthy way to prepare spaghetti squash, roasted with garlic and fresh herbs for a flavorful side dish.


Ingredients

  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves cut-side down on a baking sheet.
  4. Roast for 40-50 minutes, or until tender when pierced with a fork.
  5. Remove from oven and let cool slightly.
  6. Use a fork to scrape out the strands of squash.
  7. In a bowl, toss the squash strands with olive oil, minced garlic, oregano, thyme, salt, and pepper.
  8. Serve immediately, garnished with fresh parsley.

Notes

  • You can add a pinch of red pepper flakes for a little heat.
  • Other herbs like rosemary or basil can be used.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
