Description
Make flavorful chicken burritos covered in a rich green chile sauce.

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (10 ounce) can green chiles, undrained
- 1 (10 ounce) can red enchilada sauce
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
- 8 large flour tortillas
- 2 cups shredded Monterey Jack cheese
- 1/2 cup water (for thinning sauce, if needed)
Instructions
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through. Remove chicken and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Return chicken to the skillet. Stir in green chiles, red enchilada sauce, cumin, oregano, salt, and pepper. Bring to a simmer. Reduce heat to low, cover, and cook for 10 minutes, allowing flavors to combine.
- If the sauce is too thick, stir in up to 1/2 cup of water until desired consistency is reached.
- Warm the flour tortillas according to package directions.
- Spoon a portion of the chicken mixture down the center of each tortilla. Sprinkle with Monterey Jack cheese.
- Fold the sides of the tortilla inward, then roll tightly from the bottom to create a burrito.
- Place burritos seam-side down in a baking dish. Pour remaining green chile sauce over the top of the burritos.
- Sprinkle remaining cheese over the sauce.
- Bake at 375 degrees Fahrenheit for 15 minutes, or until the cheese is melted and bubbly.
Notes
- You can use pre-cooked rotisserie chicken to speed up the process.
- For extra heat, add a diced jalapeño with the onion.
