  • 8 slices thick-cut bread (sourdough or brioche work well)
  • 1 pound cooked smoked brisket, thinly sliced or shredded
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon brown sugar
  • 1/2 cup beef broth
  • 8 slices provolone or sharp cheddar cheese
  • Mayonnaise or butter for spreading on bread
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat 1 tablespoon butter and 1 tablespoon olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until softened, about 8-10 minutes.
  2. Stir in the brown sugar and continue to cook, stirring frequently, until the onions are deeply caramelized and golden brown, about 15-20 more minutes. Add the beef broth and scrape up any browned bits from the bottom of the pan. Cook until the liquid has evaporated. Season with salt and pepper. Remove from the skillet and set aside.
  3. Spread mayonnaise or butter on one side of each slice of bread.
  4. Place 4 slices of bread, mayonnaise-side down, in the same skillet over medium heat.
  5. Layer each slice with 2 slices of cheese, then a generous amount of the cooked brisket, followed by a spoonful of the caramelized onions. Top with another 2 slices of cheese.
  6. Place the remaining 4 slices of bread on top, mayonnaise-side up.
  7. Cook for 3-5 minutes per side, or until the bread is golden brown and the cheese is melted and bubbly. You may need to cook in batches.
  8. Remove from the skillet, slice in half if desired, and serve immediately.

Notes

  • For extra flavor, you can brush the outside of the bread with garlic butter before toasting.
  • If your brisket is cold, you can gently warm it in a microwave or a pan with a splash of beef broth before assembling the melts.
  • Feel free to experiment with different types of cheese, such as Gruyere or Monterey Jack.
