Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 small flour tortillas
  • 1 cup shredded romaine lettuce
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup Caesar dressing
  • 2 tablespoons croutons, crushed

Instructions

  1. Season chicken breasts with garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Cook chicken breasts for 5-7 minutes per side until fully cooked (internal temperature reaches 165°F).
  4. Remove chicken from the skillet and place on a cutting board.
  5. Using a sturdy spatula or pot bottom, firmly press down on each chicken breast until it is flattened (smashed).
  6. Return the smashed chicken to the hot skillet and cook for 1-2 minutes per side until slightly crispy.
  7. Warm tortillas according to package directions.
  8. Shred or chop the smashed chicken into bite-sized pieces.
  9. Assemble tacos: place chicken onto each tortilla.
  10. Top the chicken with romaine lettuce, Parmesan cheese, Caesar dressing, and crushed croutons.
  11. Serve immediately.

Notes

  • You can use pre-cooked rotisserie chicken if you skip the cooking steps and just smash and reheat the meat.
