Description
A simple recipe for tender chicken thighs cooked in a creamy Tuscan sauce using a slow cooker.

- 4 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1 small yellow onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, drained and chopped
- 1/2 cup fresh spinach, packed
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Season the chicken thighs with salt and pepper.
- Heat the olive oil in a skillet over medium heat. Sear the chicken thighs skin-side down for 3-4 minutes until browned. Remove chicken and set aside.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more.
- Transfer the onion and garlic mixture to the slow cooker.
- Add the chicken broth, heavy cream, sun-dried tomatoes, and Italian seasoning to the slow cooker. Stir to combine.
- Place the seared chicken thighs on top of the liquid mixture in the slow cooker.
- Cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is fully cooked and tender.
- Stir in the fresh spinach and Parmesan cheese during the last 15 minutes of cooking until the spinach wilts and the cheese melts.
- Serve the chicken and sauce over pasta or rice.
Notes
- You can use boneless, skinless chicken thighs, but adjust the cooking time slightly.
- For a thicker sauce, remove the chicken thighs before the last 30 minutes and let the sauce simmer on high with the lid off until reduced.
