Description

A simple recipe for tender chicken cooked in a savory peanut sauce using a slow cooker.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 cup chicken broth
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Place the chicken in the slow cooker.
  2. In a medium bowl, whisk together the chicken broth, peanut butter, soy sauce, brown sugar, apple cider vinegar, ginger, garlic powder, and red pepper flakes until smooth.
  3. Pour the sauce mixture over the chicken.
  4. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is cooked through and tender.
  5. Remove the chicken and shred it using two forks.
  6. Return the shredded chicken to the sauce and stir to coat.
  7. Serve hot over rice or noodles.

Notes

  • For a thicker sauce, remove about 1 cup of liquid during the last 30 minutes of cooking and simmer it on the stovetop with 1 teaspoon of cornstarch mixed with 1 tablespoon of water until thickened.
  • Garnish with chopped peanuts and green onions before serving.
