A simple recipe for tender chicken cooked in a savory peanut sauce using a slow cooker.

- 2 lbs boneless, skinless chicken breasts or thighs
- 1 cup chicken broth
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
- 1 teaspoon ground ginger
- 1/2 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Place the chicken in the slow cooker.
- In a medium bowl, whisk together the chicken broth, peanut butter, soy sauce, brown sugar, apple cider vinegar, ginger, garlic powder, and red pepper flakes until smooth.
- Pour the sauce mixture over the chicken.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is cooked through and tender.
- Remove the chicken and shred it using two forks.
- Return the shredded chicken to the sauce and stir to coat.
- Serve hot over rice or noodles.
Notes
- For a thicker sauce, remove about 1 cup of liquid during the last 30 minutes of cooking and simmer it on the stovetop with 1 teaspoon of cornstarch mixed with 1 tablespoon of water until thickened.
- Garnish with chopped peanuts and green onions before serving.
