Slow Cooker Jerk Chicken

Description

Simple recipe for tender jerk chicken made in a slow cooker.


Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 cup jerk marinade (store-bought or homemade)
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 1 teaspoon allspice
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon cinnamon
  • 1 tablespoon brown sugar

Instructions

  1. Place the sliced onion and bell pepper in the bottom of the slow cooker.
  2. Place the chicken thighs over the vegetables.
  3. Pour the jerk marinade over the chicken.
  4. Sprinkle the allspice, nutmeg, cinnamon, and brown sugar over the chicken.
  5. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  6. Shred the chicken using two forks before serving.

Notes

  • Serve the chicken over rice or with a side of coleslaw.
  • If the sauce is too thin after cooking, you can thicken it slightly by mixing 1 teaspoon of cornstarch with 1 tablespoon of cold water and stirring it into the hot liquid in the slow cooker. Cook on high for 15 minutes until thickened.
