Ingredients

  • 34 lb beef chuck roast
  • 1 large onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (10 oz) can diced tomatoes with green chilies, undrained
  • 1 cup beef broth
  • 1/4 cup Worcestershire sauce
  • 2 tablespoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Hoagie rolls for serving
  • Provolone cheese slices for serving

Instructions

  1. Place the beef chuck roast in the slow cooker.
  2. Top with sliced onion and bell peppers.
  3. In a bowl, combine diced tomatoes, diced tomatoes with green chilies, beef broth, Worcestershire sauce, Italian seasoning, garlic powder, and black pepper. Stir well.
  4. Pour the tomato mixture over the beef and vegetables.
  5. Cover and cook on low for 8-10 hours, or on high for 4-5 hours, until the beef is tender and easily shredded.
  6. Remove the beef from the slow cooker and shred it with two forks.
  7. Return the shredded beef to the slow cooker and stir to coat with the liquid.
  8. Toast hoagie rolls and top with shredded Italian beef and provolone cheese.
  9. Serve immediately.

  • For extra flavor, you can sear the beef roast before placing it in the slow cooker.
  • Adjust seasoning to your preference.
