A slow cooker recipe for tender and flavorful Italian beef, perfect for sandwiches.

- 3–4 lb beef chuck roast
- 1 large onion, sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (10 oz) can diced tomatoes with green chilies, undrained
- 1 cup beef broth
- 1/4 cup Worcestershire sauce
- 2 tablespoons Italian seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- Salt to taste
- Hoagie rolls for serving
- Provolone cheese slices for serving
Instructions
- Place the beef chuck roast in the slow cooker.
- Top with sliced onion and bell peppers.
- In a bowl, combine diced tomatoes, diced tomatoes with green chilies, beef broth, Worcestershire sauce, Italian seasoning, garlic powder, and black pepper. Stir well.
- Pour the tomato mixture over the beef and vegetables.
- Cover and cook on low for 8-10 hours, or on high for 4-5 hours, until the beef is tender and easily shredded.
- Remove the beef from the slow cooker and shred it with two forks.
- Return the shredded beef to the slow cooker and stir to coat with the liquid.
- Toast hoagie rolls and top with shredded Italian beef and provolone cheese.
- Serve immediately.
Notes
- For extra flavor, you can sear the beef roast before placing it in the slow cooker.
- Adjust seasoning to your preference.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
