Simple recipe for tender chicken cooked in a creamy tomato and basil sauce using a slow cooker.

- 2 lbs boneless, skinless chicken breasts
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (8 ounce) can tomato sauce
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place chicken breasts in the bottom of the slow cooker.
- In a medium bowl, mix diced tomatoes, tomato sauce, heavy cream, Parmesan cheese, garlic, basil, oregano, salt, and pepper.
- Pour the sauce mixture over the chicken in the slow cooker.
- Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is cooked through and tender.
- Shred the chicken using two forks directly in the slow cooker, or remove and shred, then return to the sauce.
- Stir well to combine the shredded chicken with the creamy sauce before serving.
Notes
- Serve this dish over pasta, rice, or with crusty bread.
- You can add a handful of fresh spinach during the last 30 minutes of cooking for extra greens.
