Simple recipe for tender chicken cooked in a slow cooker with cilantro and lime flavors.
Ingredients

- 2 lbs boneless, skinless chicken breasts
- 1 cup chicken broth
- 1/2 cup fresh lime juice
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place chicken breasts in the bottom of the slow cooker.
- In a separate bowl, whisk together chicken broth, lime juice, cilantro, garlic, cumin, salt, and pepper.
- Pour the liquid mixture over the chicken.
- Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
- Remove chicken and shred using two forks.
- Return shredded chicken to the slow cooker and stir to coat with the sauce.
- Serve warm.
Notes
- This chicken works well for tacos, salads, or rice bowls.
- If you prefer a thicker sauce, remove the lid for the last 30 minutes of cooking time.
